Square Beaumarchais. The Winter Garden, a visual signature

At the heart of the palace, the Winter Garden beneath its glass and wrought-iron dome by Gustave Eiffel remains one of the Riviera’s most iconic spaces. Lounges beneath chandeliers, palm trees, pink walls: this is the place for afternoon tea or a post-Casino cocktail.

Pavyllon Monte-Carlo, the starred restaurant by Yannick Alléno

Since April 2022, the gourmet restaurant at the Hermitage has been Pavyllon Monte-Carlo, a restaurant by Yannick Alléno. The chef took over the kitchens of the hotel’s former restaurant in May 2021 before turning it into the Monegasque version of his Parisian Pavillon. The concept is counter gastronomy: guests sit facing the open kitchen and chat with the chefs as they plate up.

The menu showcases Mediterranean elegance nurtured by seasonal produce, with the Bay of Monaco in the background. The address holds a Michelin star, and the chef pursues a sustainable sourcing approach for both fish and the hotel’s gardens.
