In September, we reported an opening on 28 November. The official website now shows a different message: reservations open for stays from 10 December 2026. For its part, Hyatt said on 29 September that its three new Grand Hyatt properties in the region, in Grand Cayman, Cancún and Los Cabos, would open in the fourth quarter of 2026. No official opening date has been published so far.

In practice, on 30 October, Hyatt’s booking engine offered no rooms on the nights of 10, 15, 20, 29 and 31 December, nor on 2 January, and Booking.com showed the hotel as unavailable on 11, 15 and 19 December. The first night we were able to book falls on 7 January 2027. For a stay over the festive season, it is best to call the hotel before booking your flights.

The entry category, the 1 King Bed, measures 468 square feet, or 43 m², with a sitting area and large picture windows facing the island. Note that not every room has a balcony: look for the “with Balcony” categories, then ocean view, oceanfront or terrace.

On the suite side, the range runs from the one-bedroom suite with kitchen to the two-bedroom oceanfront villa (124 m², plus a terrace of around 25 m²). Three three-bedroom residences top the list: Silver Thatch (168 m²), Governor’s (180 m²) and the Grand Residence, a 230 m² presidential suite.

In the evening, Salt + Cinder will serve global cuisine built around water and fire, from an open kitchen, while Brasa, the signature restaurant, will flame-grill the island’s produce. By the pool, Lo Tide will cook up the flavours of the Mexican coast; just above, the Hi Tide terrace will serve ceviches and agave cocktails facing the sunset. Breadkind Market, an Italian café, will take care of morning pastries and a “Gelato Hour” in the late afternoon, while the Lobby Lounge will focus on organic and biodynamic wines.

MERA, a spa built around seven elements

MERA Spa & Elemental Sanctuary will have fourteen treatment rooms, indoors and outdoors, and organises its rituals around seven elements, from earth to ether. The circuit brings together a heated vitality pool facing the sea, a bio sauna, an ice room, a hammam and separate aromatic steam baths for men and women. Its most unusual space is the Crystal Grotto, a dome of suspended crystals inspired by the island’s crystal caves, set aside for meditation and sound therapy.

Seven Mile Beach, ten minutes from the airport

The resort sits at the southern tip of Seven Mile Beach, Grand Cayman’s great beach, ten minutes from Owen Roberts International Airport.
