Le Mas Bellevue, the Eden-Roc group’s first hotel in Saint-Tropez, opens in June 2027 with 78 rooms

The group behind the Hôtel du Cap-Eden-Roc in Antibes and Le Bristol in Paris is setting foot in Saint-Tropez. Oetker Hotels will open Le Mas Bellevue in June 2027, on the site of the former hotel of the same name, between the village and the beaches of Pampelonne. 78 rooms and suites spread across 11 Provençal houses, like a hamlet set on the hillside.

The new hotel will be rebuilt on the site of the former Mas Bellevue, whose name it keeps, five minutes by car from both the port of Saint-Tropez and the Pampelonne beaches in neighbouring Ramatuelle.

The design has been entrusted to the Franco-Brazilian studio Triptyque, led by its founding partner Olivier Raffaëlli. It is drawing 11 interconnected houses, conceived as a hamlet tucked into the hillside, amid a landscaped garden. The materials are local: aged tiles, regional stone, climbing plants and wooden pergolas.

78 rooms, each with a terrace or patio

When the project was announced on 4 December 2024, Oetker spoke of 53 rooms and suites. The group’s official website now lists 78, with the same number of houses. Every room or suite will have its own private terrace or patio.

Gilles & Boissier sign the interiors

The interiors are the work of Parisian duo Patrick Gilles and Dorothée Boissier. The renderings released in 2024 show light-filled rooms beneath large beams, wood-panelled walls, arched windows opening onto the sea and veined marble bathrooms on stone floors.

These images date from the first version of the project: they set the tone, not yet the final layout of the 78 rooms. Oetker promises a Provençal experience built on local flavours, in a glamorous and elegant setting.

The hamlet will be arranged around an oversized infinity pool. It will also have a large wellness area, a bar and a restaurant facing the landscape and the sea. The names of the restaurants, the chef and the spa brand have not yet been announced.

“The Saint-Tropez hotel has all the ingredients to be a true masterpiece,” says Timo Gruenert, CEO of Oetker Hotels, on the group’s website.

Who will run Le Mas Bellevue?

On 12 October 2026, Oetker appointed Géraud Tournier general manager of Le Mas Bellevue. With Oetker for more than ten years, the former sommelier at Pavillon Ledoyen in Paris and Le Louis XV in Monaco joined the Château Saint-Martin & Spa in Vence as head sommelier, before becoming part of the opening team at L’Apogée Courchevel.

He has run both houses since 2022 and remains at the helm of L’Apogée Courchevel, open in winter, while Saint-Tropez comes alive mainly in summer. His deputy in Courchevel, Simon Bannelier, takes over the Château Saint-Martin & Spa.

After the Eden-Roc, Oetker heads to Saint-Tropez

Le Mas Bellevue will be Oetker’s third address on the French Riviera, after the Hôtel du Cap-Eden-Roc in Antibes and the Château Saint-Martin & Spa. “Saint-Tropez is the next step,” Timo Gruenert said in the press release of 1 October 2026. According to the 2024 announcement, the project is being carried out with the owners, the Pariente and Essebag families.

Le Mas Bellevue will not be alone on the gulf: COMO Le Beauvallon has reopened facing the village, and the Nolinski Golfe de Saint-Tropez is also slated for 2027.
