- 📍 Where · Hotel Eden, Rome, Dorchester Collection
- 🗓️ Effective date · 1 October 2026
- 👤 Background · Over seven years within the group, including Le Meurice in Paris
- 🍽️ Specialty · Culinary arts, having previously directed the food and beverage strategy for the group’s ten hotels
Dorchester Collection has appointed Tristan Delaittre as general manager of Hotel Eden in Rome, effective 1 October 2026. This is an unusual profile for a palace hotel director, coming from the culinary side rather than rooms division.

A director with a culinary background
He previously served as corporate director of food and beverage for the group, a position from which he steered the culinary strategy across Dorchester Collection’s ten hotels and designed the concepts for upcoming openings, such as The Alba in Dubai in 2028 and Tokyo in 2029.
This career path is telling. In luxury hospitality, dining has evolved over the past twenty years from a tolerated cost centre into a core brand asset. It is frequently what drives local clientele to return, and the only thing that keeps a palace hotel fully booked during the off-season week.
Seven years in the house, including Le Meurice
Tristan Delaittre joined the group at Hôtel Le Meurice in Paris as assistant director of food and beverage from July 2019 to March 2021, before stepping up to lead the department from April 2021 to January 2024. He therefore knows the company through its most exposed operation, within one of its most closely watched addresses.
Hotel Eden, a distinct property within the collection
Perched at the top of via Ludovisi, between Villa Borghese and the Spanish Steps, Hotel Eden owes its reputation to its sweeping views and rooftop setting. It is also one of Rome’s addresses where dining holds the most weight in its brand image. Entrusting its leadership to the man who penned the group’s culinary strategy is by no means a coincidence.
