The kitchen is led by Tom Sellers, chef of Restaurant Story, which holds two Michelin stars in London. He works alongside Dom Robinson, former chef-owner of The Blackbird in neighbouring Berkshire. The restaurant is named after John Penn (1760-1834), the man who shaped the Stoke Park estate as we know it today.

“Storytelling through food is at the heart of everything we do,” says Tom Sellers in the press release. His group, HiStory Hospitality, has been entrusted with all of the estate’s restaurants and bars.

The dining room was designed by Studio Shayne Brady in the spirit of Britain’s great country houses. Behind its own door, an eight-seat private room sits beneath a tropical aquarium, ideal for a family gathering or a business meal away from the main room.

The cooking pairs English country house recipes with classic French technique, following the seasons and the provenance of the produce. Vegetables and leaves come from the Stoke Park kitchen garden, run by Kate Nannery, former senior gardener at Le Manoir aux Quat’Saisons, Raymond Blanc’s house in Oxfordshire.

On the drinks side, the wine list was built by Carolina Seibel, director of beverages at HiStory Hospitality, and the cocktails by Giuseppe Masala. A hotel relaunching its dining with a big name: the same recipe is at work at the Four Seasons Marrakech with Inara.

The Penn is the flagship of five venues run by HiStory Hospitality. The Piano Bar serves classic cocktails, a wide choice of martinis and a wine list focused on American producers. The Tea Room offers teas, pastries and homemade scones, while The Clubhouse, open daily, mixes pub classics with Indian dishes.

The newest addition, The Terrace & Glasshouse, serves a lighter menu, with pizzas and barbecue in spring and summer, and can be hired for private events all year round.

Owned by Reliance Industries since April 2021, the 300-acre estate (about 120 hectares) is undergoing a restoration programme. Its 49-room hotel, suites included, is not taking bookings, and the relaunch of the hotel, spa and wellness programme will be announced later, with no date so far.

In the meantime, the championship golf course has reopened to day players, with a new academy. Other English estates are emerging from works, such as Aldwark Manor Estate in Yorkshire or the Elysium Windermere, due in early 2027.
