We tested Les Haras hotel in Strasbourg: our full review of the royal stables, its pool and its MICHELIN Key

18th-century royal stables, interiors designed by Jouin Manku and a 17-metre swimming pool: Les Haras is the most unique hotel in Strasbourg. Raphaël Simon tested this 4-star hotel, awarded a MICHELIN Key, on the edge of Petite France. Here is our full review, room by room.

From royal stables to hotel

The story begins in 1621, with a riding school for wealthy university students. In 1752, architect Jacques Gallay designed the large riding arena, the stables and the lodgings; four years later, the Royal Stud moved in. The facades, roofs, gateway and large stable were listed in 1922. The last horses left the site in 2005, and the City entrusted its rebirth to IRCAD, the surgical institute founded by Professor Jacques Marescaux: hotel revenues partly fund research, a unique model in France.

The hotel opened in 2013 with 55 rooms, then expanded into the former Diaconesses sisters’ clinic, connected by a restored tunnel: 60 more rooms, the spa and three seminar rooms. It is operated by Sogeho, the Strasbourg-based group owned by Jean-Pascal Scharf.

Patrick Jouin and Sanjit Manku have woven two threads: the equestrian world and that of care, a nod to IRCAD. Wood, leather, metal, linen: saddler stitching runs along the curved headboards, the original brick remains exposed, and in the extension, the lampshades mimic the fold of the Diaconesses’ headdress. It is a design that tells the story of the place rather than covering it up, and this is what sets Les Haras apart from chain hotels in the city centre.

The 115 rooms are divided into five categories: Classic (up to 26 m²), Superior (22 to 26 m²), Deluxe (25 to 34 m²), Junior Suite (31 to 41 m², up to three people) and Suite, with separate bedroom and living room. All feature high-end bedding, CODAGE products, a Nespresso machine from Superior level upwards, and bathrooms in the extension designed like bamboo cabins. Our advice: aim for at least a Deluxe, as the Classics remain compact for a stay of several nights.

The Spa by CODAGE and its pool

This is the decisive asset in winter. The Spa by CODAGE features a 17-metre indoor pool heated to 30°C, a pearlescent mosaic eucalyptus hammam, a pine sauna, an experiential shower, a relaxation room overlooking the garden and three treatment cabins. One hour of access is included per night, upon reservation, then €30 per additional hour; access is reserved for those over 16. A Technogym fitness room completes the facilities. Breakfast is served buffet-style in a wood-panelled room adorned with a bas-relief of medicinal plants by Pierre-Louis Dietschy: fresh juices, breads and pastries, homemade cakes, jams and honey from Alsatian farms, cheeses and cold meats, partly organic. It is served from 6:30am to 10am on weekdays and from 7am to 11am at weekends, in the dining room, in-room or on the terrace. The bar occupies the small stable, with a terrace under the trees in the courtyard.

La Brasserie des Haras, located in the former Grande Écurie with its helical wooden staircase, is independent of the hotel but can be booked at reception. Chef François Baur has been creating a menu of French classics and Alsatian terroir here since 2013.

Why 9.1 out of 10

Les Haras ticks all the boxes of what you expect from a great city hotel: a venue steeped in history, a design that makes sense and a real spa with a pool, a rarity in Strasbourg. The only downsides are the slightly tight Classic rooms, breakfast charged as an extra, and a brasserie that is not run by the hotel. For the Christmas market, the address is a ten-minute walk from Place Kléber: it features in our selection of hotels for the Strasbourg Christmas market.

Conclusion:
Les Haras succeeds in creating a hotel that tells the story of its location: royal stables, Jouin Manku decor and a 17-meter swimming pool make this 4-star address one of the most unique in Strasbourg, ten minutes from Place Kléber.
