The Japanese Restaurant, at The Chedi Andermatt hotel, rises from two to three stars in the MICHELIN Guide Switzerland 2026, unveiled on 2 November 2026 in Andermatt. It becomes the country’s fifth three-star table, and the guide speaks of “the finest rise of this edition”. For the hotel industry, the figure to remember is simple: four of these five tables are linked to a hotel or have rooms.

Who are the twins behind these three stars?

The executive chefs are twin brothers Dominik Sato and Fabio Toffolon, from Schaffhausen. They took up their posts in May 2023, at The Japanese Restaurant and at the Gütsch restaurant. Before that, one worked at the Congress Hotel Seepark in Thun, the other at Zum Äusseren Stand in Bern, each with one star. This is the first restaurant they have led together. Yoshiko Sato, Dominik’s wife, is in charge of the pastry.
The restaurant received its first star in 2017 and its second in 2023. The third arrives three and a half years after the twins took over. The restaurant also holds 18 GaultMillau points and the MICHELIN Young Chef Award presented by Blancpain.
A seven-course menu at 320 Swiss francs
The November 2026 menu, titled “The Japanese by The Twins”, offers a 7-course omakase at CHF 320, in other words a menu left to the chef’s choice, and “The Japanese Full Experience” at CHF 420, VAT included. Dishes include Swiss salmon, Norwegian scallop with Kaluga caviar, quail, venison, then kiwi and chestnut. Norway langoustine and Ozaki Wagyu A5 beef are available as supplements, from CHF 45 to 90.
The MICHELIN Guide describes a cuisine with Japanese and Western influences, with counter seats facing the plating of the dishes. A vegetarian menu and à la carte dining are available.
4 of Switzerland’s 5 three-star tables have rooms

Switzerland now has five three-star tables, and four of them are linked to a hotel or have rooms: The Japanese Restaurant at The Chedi Andermatt, Memories (chef Sven Wassmer) at Grand Resort Bad Ragaz, Cheval Blanc by Peter Knogl at Grand Hotel Les Trois Rois in Basel, and Schloss Schauenstein in Fürstenau (chefs Andreas Caminada and Marcel Skibba), with its rooms and Casa Caminada. The fifth is the Restaurant de l’Hôtel de Ville, in Crissier.
Zermatt and Gonten: new stars for hotel tables
Of the seven new one-star tables, at least two belong to a hotel. In Zermatt, ad lib is the restaurant of the Hotel Welschen, which holds a MICHELIN Key and was taken over in December 2025 by chef Dietmar Sawyere and Nicole Sawyere. She also receives the MICHELIN Service Award.
In Gonten, in the canton of Appenzell Innerrhoden, chef Michael Gollenz’s Bärenstobe is the restaurant of Huus Bären, a boutique hotel with 12 rooms and suites in the Appenzeller Huus resort.
The other five are MYLE in Bern (Opening of the Year), Origini in Morbio Inferiore (Young Chef Award for Guglielmo Curcio), CAAA by Pietro Catalano in Lucerne, Schlüssel in Oberwil and rémy in Zurich. The Sommelier Award goes to Émeline Gigaud, of Arakel in Geneva.
133 starred tables in 2026, down from 145 in 2025
The official total stands at 133 starred restaurants: 5 with three stars, 22 with two stars and 106 with one star, compared with 145 tables in the 2025 edition. On top of these come 92 Bib Gourmand, the guide’s selection for value for money, including 11 new ones. There are no new two-star restaurants, and this category falls from 27 to 22 tables.
The Japanese Restaurant left this category through the top. Stucki in Basel, IGNIV by Andreas Caminada in Bad Ragaz, La Brezza in Ascona and Skin’s in Lenzburg, all two-star in 2025, no longer appear on the official 2026 list, which gives no reason. La Brezza in Arosa keeps its two stars.
Andermatt lines up four starred restaurants

The ceremony was held in Andermatt for the first time, in the concert hall, after EHL in Lausanne. The town has four starred tables, across all three levels: The Japanese Restaurant (three stars), IGNIV by Andreas Caminada (two), GÜTSCH by Markus Neff and The Japanese by The Chedi at Gütsch (one each). The Chedi Andermatt therefore holds two of them. Another hotel is on the way: read our article on The Alpinist, which will open in Andermatt in December 2027.
120 rooms with fireplaces, 1,440 m up in the Alps
