A 1950s farm turned four-star hotel

In the 1950s, Augustin opened his table to a few passing guests, who sometimes ended up staying the night. In 1978, his daughter Ninette and her husband Gilbert took over the house, enlarged it and restored the original buildings; their son Christophe, the third generation, joined them some twenty years ago. Ninette’s name even appears on the menu, from the “Ninette” salad to Ninette’s Spritz.

We arrived early on Sunday afternoon on the route de Tahiti, in front of the four-star hotel’s sign. The property belongs to the Authentic Hotels & Cruises collection, founded by Christophe Vallet, and the concierge desk is on hand 24 hours a day. In the lounges, antique Provençal furniture, wicker armchairs and contemporary sofas gather round the fireplace, which the hotel lights on autumn evenings.

The Sublio pool: 30 °C water under the pines

The spa pool is heated to 30 °C, open from 8am to 8pm and reserved for hotel guests. On Sunday at 4pm, we followed the bathing circuit: five power jets set 50 cm apart, a jet stream for the back and stomach, a blower that sends bubbles up from the floor and a cascade shower for the neck. The striped sun loungers line up beneath the umbrella pines, and towels wait at the edge of the pool.

The water is treated with Sublio technology, and the hotel presents its pool as the world’s first spa pool filled with the brand’s hyperionic water. According to Sublio, its process “hyperionises” the water without changing its composition: only the arrangement of its ions is said to be altered. Behind this water lie a programme of twelve biological and genomic studies carried out for the brand, mainly with the Eurofins Bio-EC laboratory, and a French patent granted in 2025 to its founder, Frédéric Esnault.

The reactor sits in plain sight by the pool: a lacquered blue casing with gold bands, stainless steel fittings and an information panel in four languages.

Sublio France was founded in May 2019 by Frédéric Esnault, who says he wanted to recreate on the skin the effect of the water of the Restonica, in Corsica; we spoke with him on Sunday 4 October, at 7pm, alongside Christophe Vallet, the hotel’s manager. To understand everything about this water, read our article on Sublio.

Which of the 46 rooms should you choose?

The rooms and suites were renovated between 2023 and 2026, with Salernes tiles, antique furniture, backlit marble, polished concrete and copper taps. Ours combined terracotta floor tiles, an antique chest of drawers, a sofa and a painting of a sailing boat, with a backlit marble bathroom, a spa bathtub and a shower. The bathroom products were created with the perfumer Pierre Bourdon, the nose behind Cool Water and Kouros.

On Tuesday, we toured the upper floors: rooms tucked under the roof, with beams and skylights, and a large private terrace facing the pine forest and the sea. At the top of the range, the Stéphanie Coutas Suite, designed by the architect, is reached by a lift and then a private staircase; the 50 m² La Tour Suite is accessible by stairs only.

Our tip: make the most of the sea view, which the hotel offers in several categories: a balcony in the Sea-view Balcony Rooms, a private third-floor terrace in the Charm and Prestige Rooms. The Junior Suites & Private Terrace, some of which open directly onto the pool, are ideal for a longer stay.

La Table d’Augustin, from garden to plate

La Table d’Augustin serves lunch and dinner: Provençal cooking based on fresh produce from the house’s kitchen garden and orchard, and from the local catch; there is no half board. At lunch, in the shade of the mulberry trees or beneath the wisteria, the menu runs through carpaccios, ceviches, marinated anchovies, stuffed sardines and the peppers in oil we tasted at Tuesday lunch.

On Monday evening, the Provençal-style fish, baked in the oven, was presented to us in the dining room on its oval platter, after caramelised onion tartlets and before a red berry meringue dessert. The menu also lists spiny lobster depending on the catch, Sophia’s bouillabaisse, Charolais beef and Black Angus; and, a thoughtful touch from the house, every dessert is made with Natsuc, one of the best natural sugar substitutes. The rosé and the olive oil come from Clos Bellevue, on the family’s land.

On the menu: homemade yoghurts, sourdough bread, pastries, watermelon jam from the garden and freshly squeezed orange juice. Between the pool and the garden, La Guinguette serves cocktails and sharing plates, and room service runs 24 hours a day, picnic baskets included.

Tahiti beach on foot, a boat trip offshore

Tahiti beach, on the bay of Pampelonne, is two or three minutes’ walk from the hotel. On Monday at lunchtime, we walked along its wooden jetty, then set off on a boat trip off Ramatuelle, aboard a boat with a wood-panelled saloon. On site, the concierge can arrange a boat rental.
