Its restaurant, 99 Haussmann, is its most fitting gastronomic expression. With its Menu du Marché, available as a two or three-course meal, the establishment asserts a precise, clear, and elegantly unpretentious seasonal cuisine.

Upon reading the menu, the tone is set. Here, there are no grand gestures or verbose concepts. The Menu du Marché focuses on the essentials: the produce, the skill, the balance. Meat lovers will gravitate towards the BBQ glazed beef chuck, braised sucrine lettuce, and straw potatoes: a more indulgent, more comforting dish, but executed with precision. Special mention goes to the farm poultry galantine, flavoured with tarragon, baby artichoke, and bok choy, which revisits a French classic with an elegant contemporary touch.


Desserts: chic sobriety and savoir-faire

The desserts, priced at €14, extend this impression of discreet luxury.

The roasted black fig, roulade biscuit, strawberry sorbet, and Port sauce captivates with its balance of sweetness and acidity, while The Plums, featuring a delicate gavotte, mirabelle, greengage plum in vin jaune, and yogurt ice cream, offers a more pastry-like interpretation, yet remains light.
