Seville is about to welcome an address one might have expected in Madrid or Barcelona. Serras Collection announces Serras Sevilla, 43 rooms facing the cathedral, and will install Fismuler, the restaurant that built its reputation elsewhere in Spain. The group still presents the project as an upcoming opening.
An address measured in dozens of keys
Forty-three rooms is very few, and that is the point. While international groups approach Seville with units of one to two hundred keys, Serras Collection maintains the format that has been its hallmark since Barcelona: a hotel small enough for service to remain a person-to-person relationship. The group claims a collection of luxury boutique hotels and an expansion plan targeted at Spain and Portugal.

Facing the cathedral, which changes everything
The location is the project’s primary asset. The hotel stands opposite the cathedral and the Giralda, in a historic centre where buildable plots are rare and heritage constraints heavy. A rooftop terrace open to the cathedral is, in Seville, a selling point in itself, and the group makes it one of the pillars of its announcement.

Fismuler leaves Madrid and Barcelona for the South
Dining is not an afterthought in this project, it is the driving force. Serras Collection already operates Informal in Barcelona, Bruna in Andorra and Fismuler at Casa Serras, and announces the arrival of Fismuler at Serras Sevilla. The brand, established in Madrid and then Barcelona, has built its reputation on unpretentious produce-led cuisine. A well-known restaurant opening inside a hotel brings in local clientele, something no advertising campaign can replace.
The setup is spread across two levels: a second-floor restaurant and the rooftop terrace. This is the classic configuration for hotels in central Seville, where ground-floor space is constrained and views can only be found high up.

A city moving rapidly upscale
Serras Sevilla is not arriving in an empty market. The Andalusian capital is seeing several high-end projects converge, including the conversion of the former Plaza Nueva telephone exchange by Marriott and a Four Seasons announced for 2028. In just a few years, Seville is transitioning from a short-stay city to a high-end hospitality destination, and the competition will settle in before the first guest has slept at Serras.
This is also the limit of the exercise at this stage: the group is communicating about a project, not an active address. The number of suites, the precise schedule and the building’s identity remain to be confirmed by the house.
