After seven years alongside Julien Hennote at the Michelin-starred restaurant Le Pourquoi Pas at Hotel Castelbrac, the chef here chooses a more intimate, and also freer, playground. **His cuisine tells the story of Brittany with softness, precision, and poetry.**
