In the hushed Parisian setting of Boulevard Haussmann, just a stone’s throw from the hustle and bustle of the grand boulevards, Hôtel Bowmann cultivates a very contemporary idea of luxury: silent, refined, almost introspective. Its restaurant, 99 Haussmann, is its most fitting gastronomic expression. With its Menu du Marché, available as a two or three-course meal, the establishment asserts a precise, clear, and elegantly unpretentious seasonal cuisine.

Excellent value for money, €42 for two courses and €48 for three :
Upon reading the menu, the tone is set. Here, there are no grand gestures or verbose concepts. The Menu du Marché focuses on the essentials: the produce, the skill, the balance. At €42 for two courses and €48 for three, the offering intelligently positions itself within Paris’s semi-gastronomic landscape, while adhering to the codes of a five-star hotel.
The menu changes with the rhythm of seasonal arrivals, but maintains a clear philosophy: a contemporary French cuisine, subtly modernised, where each ingredient is identifiable, respected, and showcased without being overwhelmed.

Starters full of nuances
The starters, priced at €16, open the meal with a beautiful palette of textures and freshness.
The crispy hake brandade, accompanied by courgette velouté, lemon, lightly spiced tomato, and olive, plays a perfectly mastered Mediterranean score. The crispiness meets the creaminess, the acidity awakens the whole without ever overpowering it.
More vegetal, the plate of green beans and cecina, conceived “like a salad”, surprises with its balance: pickled cherries, fried onions, a play of temperatures and crunch. A modern, almost graphic starter, which will appeal to lovers of controlled contrasts.
As for the veal tortelli, celeriac, and clear consommé with ginger and lemongrass, they embody a more technical, more gastronomic cuisine, where the aromatic depth of the broth dialogues with the tenderness of the stuffed pasta.

Precise dishes, generous without heaviness
Priced at €29, the main courses confirm the overall coherence.
The catch of the day, grilled pointed cabbage, preserved lemon, and beurre blanc with fish roe, perfectly illustrates this seasonal cuisine: clear, elegant, without being overwhelmed. The well-executed beurre blanc envelops without masking.
The coley and mussels, accompanied by a chickpea and confit pepper ragout, coriander, and curry emulsion, takes on a more adventurous inspiration, but always contained. A warming, perfectly balanced dish, where spices remain an accent and not an overwhelming signature.
Meat lovers will gravitate towards the BBQ glazed beef chuck, braised sucrine lettuce, and straw potatoes: a more indulgent, more comforting dish, but executed with precision. Special mention goes to the farm poultry galantine, flavoured with tarragon, baby artichoke, and bok choy, which revisits a French classic with an elegant contemporary touch.

Desserts: chic sobriety and savoir-faire
The desserts, priced at €14, extend this impression of discreet luxury.
The roasted black fig, roulade biscuit, strawberry sorbet, and Port sauce captivates with its balance of sweetness and acidity, while The Plums, featuring a delicate gavotte, mirabelle, greengage plum in vin jaune, and yogurt ice cream, offers a more pastry-like interpretation, yet remains light.
The selection of cheeses by Xavier Thuret, MOF, available with a supplement, naturally stands out for connoisseurs of fine produce.

A wine and beverage list that lives up to expectations.
The restaurant offers a particularly well-curated selection of wines by the glass, featuring excellent organic and niche appellations: Chablis, Menetou-Salon, Crozes-Hermitage, and Médoc. Lanson champagnes, especially the Blanc de Blancs, add a festive touch perfectly aligned with the spirit of the venue.
Regarding non-alcoholic beverages, the homemade options · detox juices, organic kombucha, artisanal iced tea · demonstrate a contemporary awareness of new consumption habits.
